Pecorino Romano is the most well known of all the pecorino cheeses. The Italian word “pecora” means sheep, which denotes the use of sheep's milk . The majority of the production area is dominated in the southern portion of Italy in the Sardinia, Lazio, and Tuscany regions.
"Genuine" pecorino regulates its production with a rigorous set of quality standards.

The cheese is hard-pressed and is made into large cylinder-shaped wheels of approximately 50lbs’ and can be cut in quarters approximately 15 to 20 lbs. It is a hard to semi-hard cheese with a texture that is described as grainy, and crumbly. The exterior is a hard yellow rind with a crust that will get darker with the desired maturity. The interior is whitish-yellow color. It is most famous for its distinctive aromatic flavor:
sharp, salty yet pungently pleasant.

The preferred cheese for grating over most pasta dishes, especially those with highly-flavored sauces of Roman origin.
