There are extra steps and care taking, including a longer aging process (minimum of 24 months) in assuring the quality that the "Rocca" label is recognized as the top of the Parmigiano family of cheeses. Ordinary parmesan is, well, quite ordinary in comparison. Described as a semi hard cheese, it is made from a traditional mix of partly skimmed, non pasteurized cow's milk that is only grass or hay fed. Produces a yellowish golden and slightly oily rind, encasing an interior of a straw-yellow to a deeper yellow in color with a slightly gritty bit fine grained texture. The presence of small white crystals are indicative of the 24 month aging process. All this results in bend of a lactic, fruity fragrant aroma combined with a rich, savory, distinct nutty taste and ultimately the intensity that melts in the mouth. It is at times described as having a slight pineapple flavor.

A true Parmigiano Reggiano must be manufactured in a strictly regulated tradition and must come exclusively from the Northern Italian provinces of Parma and Reggio-Emilia. Each wheel created must meet all criteria to be decree’ an authentic Parmigiano Reggiano. It is umder the control of the Italian Government with a legal trademarked stencil made by small dots in the letter’s (DOP) protected designation of origin.
