The general description is similar to most Parmigiano; a semi hard cheese, with medium fat, and is made from a traditional mix of partly skimmed, non pasteurized cow's milk that is only grass or hay fed. This producing a yellowish-golden and slightly oily rind, encasing an interior of ivory white to a straw-yellow color with a fine, slightly gritty texture.

What sets a Reggiano light years apart from all other Parmigiano: like a fine wine, the lengthy ripening period gives a more fine grained texture with the presence of small white crystals which are indicative of the 24 month aging process. The result of this creation, compared to other versions of Parmigiano, is a deeper color with a lactic, fruity aroma, and ultimately a delicate, distinct, nutty taste that melts in the mouth.

A true Parmigiano Reggiano must be manufactured in a strictly regulated tradition and must come exclusively from the Northern Italian provinces of Parma , Reggio-Emilia and Modena including some zones of Mantua and Bolgona. Each wheel created must meet all criteria to be decree an authentic Parmigiano Reggiano. It is under the control of the Italian Government with a legal trademarked stencil made by small dots in the letter’s (DOP) protected designation of origin .

Each case is 11lbs of precut individual cryovac pieces, weighing aproximately 8 to 12 onces each.
