The general description is similar to most Parmigiano; a semi hard cheese, with medium fat, and is made from a traditional mix of partly skimmed, non pasteurized cow's milk that is only grass or hay fed. This produces a yellowish-golden, slightly oily rind, encasing an interior of ivory white to straw-yellow color, with a slightly gritty fine texture and a complex savory,nutty taste.

What sets a Reggiano light years apart from all other Parmigiano: like a fine wine, the lengthy ripening period, gives a more fine grained texture with the presence of small white crystals which are indicative of the 24 month aging process. It is cooked, but not pressed, and no chemical preservatives or artificial additives are used. It is put in tanks and saturated with only Mediterranean sea salt . In addition, during the aging stage, each wheel is meticulously turned over by hand multiple times. All this care in traditional steps allows the sugars to concentrate and caramelize, this all results in creating a deeper color and a lactic, fruity fragrant aroma and ultimately delicate nutty taste that melts in the mouth. In comparision, inferior versions of Parmigiano have been decribed to leave a bitter aftertaste.

A true Parmigiano Reggiano must be manufactured in a strictly regulated tradition and must come exclusively from the Northern Italian provinces of Parma , Reggio-Emilia and Modena including some zones of Mantua and Bologna. Each wheel created must meet all criteria to be decree an authentic Parmigiano Reggiano. It is under the control of the Italian Government with a legal trademarked stencil made by small dots in the letter’s (DOP) protected designation of origin .
