Feta Cheese is mostly associated with Greece, but is actually produced in many different countries. It is widely known that Bulgarian made Feta Cheese is the best! It is made from sheep's or goat’s milk soaked in brine, and ripened for 15-30 days. Other common fetas are harder, crumbly versions that can be aged for up to 3 months. The reason why the top chefs prefer this Bulgarian feta is that it has a much stronger, tangy and sharp taste, with a much more velvety, creamy texture than the other feta cheeses. Chefs will sometimes refer to this "white cheese" as “sirene”.
