MACAROON PASTE 4-7#
It is traditional cookie dough that originated in Italy and refers to maccherone because of its simularity to the consistantsy and color of pasta. It made up of ground almonds mixed with sugar and egg whites. It is the main ingredient in a classic small cookie “Almond macaroons” which results in a chewy, crunchy combined texture. An additional option is for baking it can be flavored with various ingredients such as chocolate, maraschino cherries or orange peel and coconut.

Historically the macaroon was invented in an Italian monastery in 1792. Later, two Carmelite nuns hiding during the French revolution supposedly passed on the cookie recipe was to the Jewish community in France, who subsequently made it a staple of Passover baking. It is now a poplar ingredate in many cultures and forms of baking.
