Jack is a semi-hard white American cheese from cow's milk, with a mild, sweet taste. Historically, it was made by the Franciscan friars of Monterey, California, then during the goldrush of 1840’s it was inproved upon and heavely marketed by David Jack which gave the cheese its name sake. It is great on sandwiches and any cheese melting needs. It is also available in and 5 lb 40 lb blocks
