Italian Fontina comes from the Aosta Valley high in the Italian Alps near the French and Swiss borders. It’s been around since the 12th century. Production occurs in other parts of Italy, as well as Sweden. A source of un pasteurised cow’s milk, it is a relatively young cheese, ripened for a minimum of 3 months.
Classified as a semi-soft cheese, it is slightly elastic and densely smooth with small holes. Its interior has a color of pale yellow with a waxy red- brown rind.
The taste is described as a mildly nutty flavor with a rich fruity taste and with a hint of honey. When melted, the flavor takes on an earthy taste of mushrooms.
Besides being used for a pristine table or dessert cheese, it is excellent for melting in cream sauces and is the primary ingredient of Italian fondue. When melted, it can be a substitution for many imported cheeses such as Gruyère, Emmental, Taleggio, Edam or Gouda. It is available in 6lb wheels.
