French Roquefort is considered one of the world’s oldest cheeses; it originated from the South of France, in the caves outside the village of Roquefort. The story of Roquefort starts when a young shepherd, eating his sheep’s milk cheese for lunch , saw a beautiful girl in the distance. In his excitement to meet her he didn’t finish his meal and stored it in a nearby cave. Months went by, then remembering the cheese, he sought it out and found his moldy cheese. Now it is considered to be “King of the Blue Cheeses”.
In order to be a true Roquefort it must be made from a special breed of sheep from the regions of Lacaune, Manech and Basco-Béarnaise . It is then aged in the natural Combalou caves form six weeks to 3 months and only extracted after consumed by the mold.
The flavor of the milk is indicative of its surrounding environment of limestone, grass and wildflowers. The result is a semi-hard cheese that is slightly moist and crumbly. It has no rind and is shinny white with distinctive veins of blue mold.
The taste has been described as a complex journey on ones palate. It begins with a slightly, mild flavor, then a sweet flowery taste, then evolves to a smoky flavor, and fades to a salty finish.
The uses are endless, limited only by the chef’s imagination. It comes in 3 lb wedges.
