Also known as “Danablu”, the origins of Danish Blue can be traced back to early in the 20th century, with the intentions to produce a Roquefort style cheese. The results are significantly milder than a Roquefort, and the manufacturing process is less complex, making a more affordable type of blue cheese.

Danish Blue is made from rich cow's milk aged for eight to twelve weeks. Mold is introduced to the curds to insure even distribution of the blue veins. The results are a semi-soft, creamy, slightly moist cheese with a whitish rind and a white to light yellow interior marbled with bluish-green veins. It has is a milder flavor than some other imported blue cheese but is characterized by its own sharp and peppery zest.
Mainly used for crumbling on salads, but because of its low cost it is ideal for flavoring sauces. It can also be sliced as a great dessert cheese with fruit. It comes in approximately 7 lb wheels.
