One of Italy's most famous cheeses Gorgonzola is a blue veined cheese made from whole, pasteurized cow's milk. It is originally from the Province of Lombardy in the caves from the village of Gorgonzola which lies just outside Milan. Gorgonzola is produced throughout the Lombardy and Piedmont Regions. Gorgonzola ripens in three to six months. During the aging process bacteria added to encourage the spread of the mold spores. This gives it its famed marbled greenish-blue look.

Gorgonzola Dolce is the younger (less aged) and creamier version. The texture is buttery but delicately firm, crumbly but almost spreadable. The interior color is a light ivory, streaked with greenish blue veins with a natural grey rind.

Known for its strong aroma, the taste is slightly pungent but with an almost sweet, buttery flavor with a savory bite from its blue veining.

Frequently used in Italian cooking, most commonly crumbled into salad dressings. It is also known to be melted into traditional sauces, dips and dishes such as a risotto or polenta. It can also be used as a topping on gourmet pizzas. As a dessert cheese, it is a perfect accompaniment for pears, apples and peaches and pairs nicely with hearty red wines. It comes in foil-wrapped wedges of approximately 3lbs.
