CACIOTTA"PEPE NERO" FRESH PECORINO
Caciotta is a specialty type of artisan cheese produced in many regions of Italy, from many types of milk, including sheep’s milk (Pecorino). The aging period is brief, hence the name “rigata”. Whole black peppercorns are added giving the term “Pepe Nero”. The taste is much milder than a basic Pecorino, but with the strong enticing essence of pepper that makes this such a wonderfully unique cheese.

It is classified as a semi-soft cheese with a texture that is soft and ceamy with visible grains and the specks of black pepper corn. The color is a yellowish white, with a yellow rind. An excellent table cheese that can be enjoyed by itself or used as a spread and pared with limitless culinary delights that will add an extra peppery zest to any plate. It is cylindrical in shape and comes in about in 4lbs wheels.
