Asiago is produced in the high alpine region of the Italian Alps in the Vicenza Provence of Veneto Region, originally in the town of Asiago. It is also produced in the Region of Trento and in other parts of Veneto by local dairies of Padua and Treviso and up to the foothills of the famed Dolomites.

The different aging durations results in different textures. One of the benefits of a mezzano (longer aged) Asiago, is a stronger tasting product that gives that bit of a crunch that it is known for. This is a result of a higher tyrosine level due to the higher quality milk used. The texture also tends to be to a little crumbly and the color is yellow with a glossy rind.

The taste that jumps out the most is a tangy blend of Parmesan and sharp cheddar. Because of the high quality and variety of grass found in these alpine meadows there is a complexity of flavors ranging from nutty and fruity, to hints of butterscotch, and even little like toasted bread.

The mezzano Asiago is often used as a grating cheese that is interchangeable with parmesan and romano cheeses. It can also be used sliced, melted onto sandwiches of hearty Italian breads and meats, and for pizza toppings. The inovative chef will include it with a variety of fruit dishes such as fresh figs or pears. It complements very well with such beverages as red wine, cranberry juice, and sparkling grape juice. Imported Asiago has a much better tasting profile and uses that are much more dynamic than that of the domestic version.
