MANCHEGO **SPANISH** 2-10#
Manchego is from the La Mancha region of Spain and is the most famous of the Spainish cheeses. It is made from sheep’s milk and depending on the three different states of maturity (3 to 12 month ages, older being of higher value), it can be classified as a semi-firm cheese.

Its color ranges from a light yellow to a golden yellow and its rind is between light brown and dark grey with an embossed pattern. The taste is described as slightly salty but with a full-bodied tangy, fresh farmhouse flavor.

A great melting cheese, prominent in Mexican cooking that can be used in a sophisticated quesadilla. It also goes well with salmon, Serrano ham, or lamb. Noted for also being a great dessert cheese, pared with fresh fruit and honey.
