Myzithra is a traditional unpasteurized Greek ricotta-style cheese made from sheep and/or goat-milk. It is known as hard ricotta and very similar to ricotta salata. Myzithra is sometimes called a pressed and dried version of feta.

It is described as soft-hard cheese with a cottonlike, crumbly granular texture. The color will range from snow-white to dull white. The taste profile has a much more interesting flavor than a fresh ricotta. The flavor is pungently nutty and salty. It is made in various sizes and shapes most commonly 5 lbs. It is popular as a grating cheese over pasta dishes and also can be enjoyed as a dessert or antipasta cheese.
